Black and Tan Cheddar Soup
In a medium pot, melt the butter over medium heat.  Add the vegetables.  Saute for about 5 minutes or until vegetables are soft.  Stir in flour and cook 30 seconds more.  Gradually stir in the broth, lager, and stout.  Cover and cook for 15 minutes.  Add cream or milk, cayenne, salt, pepper, and 3 cups cheese.  Cook and stir until cheese is melted.

Serve hot garnished with the remaining cheese. If you have bacon bits, they make a good garnish in addition to the cheese.
